If March comes in like a lion, it must have been the Cowardly Lion!  Let me check the calendar again – yep, it’s March 12th already – good grief!  It’s hard to believe, but it’s almost Spring.  No, really!  The first day of spring is a week from tomorrow, for cryin’ out loud!  March, when cowboys – real cowboys, not the football kind – when real cowboys invade Houston, and March Madness rules sportstalk shows, and maybe most importantly for those of us here on The Outdoor Cooking Show – when crawfish season begins!
